Carlos' great oatmeal cookies
I've worked up a recipe for oatmeal cookies, developed from making them for my kids over the years. This one adds a little bit of molasses which makes them melty in the oven, then crispy when they cool. Yum!
The Best Oatmeal Cookies
1 C brown sugar 1 C granulated sugar 1 C butter (2 sticks, room temp) 2 eggs 2 tsp vanilla 1 Tbsp molasses
2 C all-purpose flour 1 tsp baking powder 1 tsp baking soda 1 tsp salt 2 C regular ("old-fashioned") Oatmeal 1 C chopped walnuts
1) preheat oven to 350° 2) grease cookie sheets lightly with Crisco 3) beat butter and sugars till creamy, add eggs and vanilla and molasses, beat together 4) combine dry ingredients except oatmeal, whisk together until mixed, add to butter/sugar mixture. 5) add oatmeal and walnuts
6) Use spoon or wetted fingers to drop balls 1/2"-3/4" large on cookie sheet about 2" apart (they spread a bit when baking.)
7) Bake 10 minutes or until just golden brown. Slightly undercooked is better. You may need to find the right temp and time for your oven.
Place on cooling racks for 5-10 minutes.
You can adjust amount of molasses to taste. More yields a darker taste. You can also use less walnuts, add chocolate chips or raisins. I often throw in about a 1/4 cup of sliced almonds as well as the walnuts.
